Baked zucchini fries




Inspiration is back! I'm picking up photography again, after a hazy transitional time. That really makes me very happy: photography is a medium which holds a cardinal place in my life. And the other exciting thing: Per and I are renovating our entrée! To be entirely honest, I should zoom in on the "we"...as he does all the heavy duty tasks while I...give him all the moral support I can! In his own words, "you plan for a couple of days and I slave for the next couple of weeks!" :) 



Ingredients:


- 3 medium zucchinis
- 1 cup bread crumbs
- 2 egg whites
- 2 Tbsp olive oil, more if needed
- ½ cup all purpose flour
- ½ tsp salt
- 1 tsp garlic powder
- 1 tsp sesame seeds
- 1 tsp cayenne pepper
- 2 Tbsp grated Parmesan


Preheat oven to 250º C and line baking sheet with parchment, coat lightly with olive oil. In a large bowl, combine flour, salt, pepper, garlic powder, cayenne pepper and Parmesan. In another bowl, beat lightly the white eggs until frothy. In a deep dish, mix bread crumbs and sesame seeds. 


Slice zucchinis into fry size sticks. Roll zucchini into flour mix, dip into egg whites and coat with bread crumb and sesame seed mix. Line the sticks in a single layer on the baking sheet, drizzle a bit of olive oil over. Bake for about 25 minutes, turning once until golden and crisp but still tender on the inside.

  1. These look great. 250 degrees seems low to get that brown... but I trust you :)

    Recipe is 250 C which is about 480 F.
